How to make Rice and Eggplant

Ingredient:
- 1 medium size onion
- 2 cups of white rice
- 1 large eggplant
- 200 g beef
- 2 tablespoons of tomato sauce
- ½ teaspoon of turmeric
- Vegetable oil
- Salt and pepper
Direction:
1. Skin the eggplant and chop into small pieces and let it sit in salt and water for 30 minutes. Then remove the water and let it sit out for a minute or two. Then cook the slices for a 4-5 minutes.

2. Chop the onion and fry in a pan for 4-5 minutes. Cut your beef into small pieces and add to the onions. Let it cook for another 5 minutes.

3. Add your spices and tomato sauce and mix well. Add half a cup of boiling water to the pan. Put the lid on and let it cook until it soaks up the water. Then turn off the heat.
4. Add in the fried sliced eggplants to it.

5. Using the recipe previously posted on how to make Persian rice, cook the rice and add the mixture to it.
