How to make Zucchini Kuku

Kuku is an egg-based Iranian dish. It's a popular vegetarian dish that is also made with a variety of ingredients. Some variations include; Kuku sabzi (herb Kuku), potato Kuku, lima bean, and more. The food is either served by itself, or in most cases served with bread.

Ingredients:

- 3 Medium sized zucchinis

- ½ Medium sized onion

- 2 Eggs

- Handful of walnuts

- ¼ teaspoon of turmeric

- Salt and pepper


Directions:

1. Using the large grater side of your grater, shred your zucchinis into a bowl.

Note: After peeling your zucchinis, you can sprinkle some salt on top of it and let it sit for 30 minutes then rinse and dry to take away from the zucchini's bitterness.

2. Shred the onion on top of the shredded zucchini.

3. Using the medium grater side of your grater, shred the walnuts and add them to the mixture. Let it sit for another 30 minutes for the excess water from onions to evaporate.

4. Add the turmeric and your preferred amount of salt and pepper to the bowl.

5. In a separate bowl scramble your eggs. Add the eggs to your mixture and start mixing.

6. Heat up your pan to it’s Medium-Low temperature and a little bit of oil so it won’t stick to the pan.

7. Pour the mixture onto your pan and put a lit on top so the mixture thickens on the top. After it thickens, remove the lid. Let it cook until it forms a crisp layer on the bottom. Flip upside down after it formed that crisp layer.

8. After both side have been cooked, divide it up into slices and enjoy!
